Compounds that have similar smells also have similar structural features called functional groups. These groups may be an ester, alcohol, ketone, amine or acid. If the functional group present in the molecule is known, one can predict the smell.
For example:
- All esters smell sweet
- All
amines smell fishy - All acids smell putrid
Ketones smell minty and sweet- Alcohols smell sweet and medicinal
Thus, compounds that have similar functional groups also have similar properties. For example, esters smell sweet.
