Mutarotation can be described as the change in the optical rotation accompanied by epimerization. In case of carbohydrates, epimerization is seen at the hemiacetal carbon atom. This process is often seen in case of equilibration in the solution state. The process was discovered by A.-P. Dubrunfaut.
