Concept Introduction:
Lycopene(C40 H56 ) is a bright red pigment and phytochemical found in red fruits and vegetables like tomatoes, carrots, etc. but not in cherries or strawberries. It is a free radical fighting antioxidant, and it helps in the protection against cancer.
ß-carotene, (C40 H56 ) is a precursor to vitamin A. It is used as a food color because of the yellow color. This compound is found in plants in combination with chlorophyll and assist in the harvesting sunlight or energy.
