Concept Introduction: Sunflower oil is mainly a triglyceride that consists of 2 linoleic acids and 1 oleic acid. So it has 2 structural isomers.

Margarine is defined as partially or completely saturated fat that is produced from Hydrogenation of vegetable oils like sunflower oil. This increases the melting point of the oil and hardens it.
