Chapter 9, Problem 2E
Summary Introduction
To determine: The triacylglycerol that yields more energy on oxidation: the one that contains three residues of linolenic acid or the one with three residues of stearic acid .
Concept introduction: A triglyceride is an ester that is a main constituent of body fat as well as vegetable fat. It is derived from glycerol and three fatty acids. There are different types of triglycerides, mainly saturated fat and unsaturated fats. Linolenic acid is an essential fatty acid and stearic acid is a saturated fatty acid with an 18-carbon chain.
