Periodate is an oxidative reagent that cleaves carbon-carbon bonds carrying hydroxyl groups Periodate oxidation can be used to distinguish between pyranose form and furanose form based on their end product ethyl glycoside.

Pyranose form cleavage occurs two times resulting in the production of formic acid. Cleavage of furanose form occurs between C2 and C3, between C5 and C6. Cleavage of furanose, by periodate produces formaldehyde, which is helpful to differentiate furanose from pyranose.
