Melting point of fatty acids:

  • Increase in length of hydrocarbon chain of a fatty acid and its degree of saturation increases melting point.
  • Fatty acids that pack better way has attractive dispersion force between molecules which increases melting point.
  • Saturated fatty acids pack regular, compact form than unsaturated fatty acid. Due to kink induced by cis double bonds, unsaturated fatty acids are arranged irregular.
  • Therefore, it has low melting point. Hence, unsaturated fatty acid has lower melting point than saturated fatty acid.
