Butter, beef tallow and lard are natural sources of fat which can be directly obtained from milk or meat whereas the oils such as soybean, canola, etc are produced in industries and for obtaining these processed fat, the seeds from the respective sources grinded and heated to extract the product which can be processed through several stages to get the refined product.
The calories obtained from fat are quite higher in comparison to carbohydrates.
