Since the industrial revolution took the modern form starting 200 years ago, what three social values did processed foods come to represent? (.5pt ea. – 1.5pt - It is relatively inexpensive, created to appeal to a broad range of pallets, created to last a long time, and easy to ship, that would be convenient, affordability, and accessible, they made it easier for people to create meals quickly, more affordable, and they were available in a wide range of locations. 2. Describe two ways World War II changed how food was produced and distributed across time and space (two fundamental shifts / two examples). (2pt) During the Second World War, there was an enormous effort to produce food for troops overseas, and to get that food to where the troops needed it, they developed a transportation system, and that is when they developed all of the highways across America. The company operated a self-contained and complete as a factory can be made, and this is when they started the trucking systems, the refrigerated trucking systems. As well as in the 40s, they marked a big shift in the way we farmed our goods. Fast food quest for Uniformity and cheapness warped the entire supply chain.
5. What is the social movement of food that counters fast-food culture? (.5pt) Organic, local, and fresh foods. The farm-to-table movement had appeared but there was really no stopping fast food as it became the pinnacle of industrial and processed foods. 6. Compare two key differences between traditional animal farming using modern technology and industrial CAFO farming. The video has several attributes in a few different segments – take notes. (2pt) Traditional farming emphasizes cultural heritage, local sustainability, and low environmental impact. On the other hand, modern farming prioritizes high productivity, global market demands, and technological advancements. 7. What percentage of U.S. farms market and sell their food locally? (.5pt) 8% of farms market and sell their food locally. 8. Describe Joel Salitin’s perspective on the role of food in relation to community and farming. There are several interview segments from which you can draw the answer from – take notes. (2pt) Joel Salatin is a well-known farmer and advocate for sustainable agriculture. He believes that food plays a crucial role in building and strengthening communities. According to Salatin, local food production and consumption can foster stronger connections between farmers and consumers, creating a sense of community and trust. He emphasizes the importance of supporting small-scale, regenerative farming practices that prioritize soil health, animal welfare, and environmental sustainability. Salatin believes that by prioritizing local and sustainable food systems, we can create healthier communities and a more resilient food system for the future. 9. Is the chicken nugget (as invented in 1983) a natural food product? Explain why or why not. (1pt) They were a way of using byproducts, and from watching the video, i don’t see it as a natural product. They were a byproduct of chicken production, and to who invented them, was someone who was promoting poultry, he got the idea that if you look at all these products and ground them up and put them together that you could make them look “like chicken” 10. How far does the average food product travel for consumers to purchase? (.5pt) 1500 miles
11. What is one issue addressed by making alternative meat products from plants? (1pt) Factory farming, they use animals as machines feeding them beans and meat to make meat, they developed a machine where they can put the feed that they feed the animals in, and they get tasty plant based meat. 12. What drives the volume of global food production to outpace population growth? (hint: think about the consumption per capita increase) (.5pt) Over the 20 th century as a whole global population increases roughly by a factor of 4, consumption per capita increases by a factor of nearly 20, and that is what drives the growth of food production in the 20 th century. 13. Describe two social consequences of industrialized meat, dairy, and processed food production? You can draw this answer from the video and / or the food systems course content. (2pt) One consequence from the powerpoint, slide 6 3 rd bullet point says “combined with fast-food, processed foods, and sugar, meat & dairy consumption has now made the U.S. conventional diet the number one preventable form of death and disease. Quoted from the video “the same evolutionary drive for calorie-rich food that helped us evolve is now threatening our lives, the largest study is the global burden of diseases and why we should care about nutrition. The food choices we make decide our health, but it can be preventable with a healthy enough planet-based diet and other lifestyle changes.
