Learning objective : In addition to learning about the public problems of food deserts, food insecurity, and the impacts on public health, communities, and low-income individuals and households, this assignment is meant to simulate the beginning stages of the scientific process. First, gather resources and articles about the topic. This step has been complete for you. Second, conduct a literature review and annotate what you find. By answering the questions below, you will be doing an abbreviated version of this step. Third, ask a key question to better understand the issue. Finally, create a valid and reliable hypothesis to answer all or part of the key question. Question Set #1. Go to the USDA webpage and read the section “What is a Food Desert” to learn about food deserts and answer the following question: https://www.ers.usda.gov/amber-waves/2011/december/data-feature-mapping-food-deserts-in-the-us/ 1. In 2-4 sentences describe a food desert. Be sure to include the two specific criteria that a census track must meet to be considered a food desert (2pt). When reading the article to get a better understanding of what a Food Desert is, I believe it is a community that lacks healthy and has limited access to food that’s healthy and nutritious. It’s basically an urban area that has very limited access to fresh fruits, vegetable's, etc. of nutrition's. Question Set #2: Go to the Michigan State University Extension webpage to learn about barriers to overcoming food deserts and answer the following questions: https://www.canr.msu.edu/news/whats_a_food_desert : 1. Is a food desert the absence of food? In 1-2 sentences, explain why or why not? (1pt) 2. What are the three barriers to overcoming food deserts? List each barrier with a 1-3 sentence description explaining how this is a barrier to overcoming the impacts of food deserts. (3pt)
Transportation – Many people don’t have access to vehicles and live a long distance. If they do have a vehicle, the cost price can be high for even filling up your gas to drive. It can also be hard to go and purchase groceries for the whole family and transport them on the bus. Access – People can get limited access to fresh food and most places around might not have a healthy variety of foods they can choose in stores. And many places don’t sell food as their main source of revenue so it can be really difficult to access those healthy and fresh foods. Cost – The cost of fresh food and other places is higher than what you can get from the grocery stores to buy food from, and is even more expensive then healthier options you can get like your fruits and vegetable's. Since some stores aren’t buying large amounts of the fresh produce, it tends to be more expensive and costs the consumer to buy more. Some stores sell fresh produce individually instead of all together which costs us more. Question Set #3: Read this article from The Conversation (2021) to answer the following question: https://theconversation.com/what-is-food-insecurity-152746 1. In 4-6 sentences describe food insecurity in terms of food justice. Be sure to include the difference between “hunger” and food insecurity, and how food insecurity is exacerbated by food deserts. (2pt). When describing food insecurity, it is measured at a house hold level that showed limited to no access of food. Families that have limited access to insufficient nutritious food, food insecurity is exacerbated by food deserts because it can cause diet related chronic diseases known as diabetes and hypertension. Now food insecurity in terms of food justice, refers to the distribution of food resources where people are facing access to affordable and fresh healthy food. Question Set #4: Read this article from The Conversation (2020) to answer the following question: https://theconversation.com/fast-food-is-comforting-but-in-low-income-areas-it-crowds-out-fresher- options-136227 1. In 4-6 sentences summarize the impact of the fast-food industry in terms of community health, especially for low-income individuals living in food deserts. Be sure to include the social norms / social behaviors created when fast-food crowds out healthier, fresh options (2pt).
The impact of the fast food industry faces challenges when purchasing fruits and vegetable's with food insecurity, the lack of resources, and time contribute to food insecurity as well as racial segregation and poverty. And because of these reasons, the households that rely on fast food restaurants are low income food insecure households, single parent households, and undergraduate students. Question Set #5: Be sure to review the slides and content sub-folder on hypothesis formation, validity, and reliability. Then watch this video by The Guardian (13 min) about Memphis, TN, to answer the following question: https://www.youtube.com/watch?v=E6ZpkhPciaU&t=2s 1. Using a qualitative approach, summarize the food desert experience of those featured in The Guardian video. (approx. 5-10 sentences). While the qualitative description needs to focus on the people and social environment featured in the video, the overall summary can include aspects learned from any of the content sources provided in this assignment / the Chapter 2 section (3pt). Food Deserts experience no access to supermarkets and a large percentage of residents don’t have any transportation. Without people having transportation, people have to call someone to take them to the grocery store because with food desert, some people don’t have the transportation to get to the store. In where the video takes place, they don’t have access transportation to grocery stores so they had to take a bus stop and ride it all the way to the grocery stores. People have to take two busses sometimes just to get to the grocery store because with food desert, there’s limited transportation. The people in the social environment deal with not having transportation they need to get to the grocery stores. A lady talks about how when she goes to the convenience store, there's not much she can feed her kids, but when she can go to the grocery store she can make a four course meal. The food desert experience for those affected are struggling with the lack of resources and fresh fruits and vegetables, as well drinks as its not the healthiest choice for them. They’re also struggling with taking busses back and forth to go to the store. But one of the biggest problems is that as integration of neighborhoods became more prevalent, a lot of folks moved out of those neighborhoods, the people that remained have these food deserts or did not have the resources they needed in order to move. There are a lot of fast food restaurants but if they can get more restaurants with healthy food, it would be a lot better for the people. 2. After reading the required article and website materials, watching the NPR video on housing segregation ( optional ), and / or watching the The Guardian video ( required ), pose a key question you would like to research to better understand the impacts of, and solutions to food deserts. Then write a one-sentence hypothesis to research your key question on food deserts (2pt). Keep in mind that a hypothesis must be valid and reliable. Hypothesis: Low-income households are more likely to live closer to fast-food restaurants than full-service grocery stores. Example 2 Key question: What health impacts are at greater risk for those living in food deserts? Hypothesis: Individuals living in food deserts have higher rates of diabetes than individuals not living in food deserts. Mine. Key question: What are some potential solutions that can help alleviate the possible risks of Food Desert? Hypothesis: If planting gardens and bringing in more supermarkets to those that are dealing with food desert, than it can help us consume fresh produce and have access to affordable nutrition's, as well as improved health outcomes.
