Appendix B–Dietary Requirements Template
Dietary Requirements
Dietary requirements
(Summarise the special request or dietary requirement that needs to be
addressed. What is it? How might the issue affect the customer if failed to
address I adequately?)
One of the guests has a special dietary requirement – they are a vegetarian
and do not consume any meat or animal products. It is essential to address
this requirement carefully to ensure the guest's satisfaction and avoid any
discomfort or dissatisfaction during the event.
Impact of Failure to Address the Requirement: If the vegetarian dietary
requirement is not adequately addressed, the guest may end up with limited
or unsuitable food options. This could lead to feelings of exclusion and
disappointment, as well as potential health issues if the guest accidentally
consumes food that contains meat or animal products.
Strategy
(Describe how you will adjust your recipe to address the dietary requirement)
To accommodate the vegetarian guest's dietary requirement, the team will
make the following adjustments to the recipes:
1.
Replace Chicken Drums of Heaven with Vegetable Drums of Heaven:
Instead of using chicken, the team will prepare crispy and flavorful
drumsticks using a combination of vegetables like mushrooms, zucchini,
and cauliflower. The same spicy and aromatic marinade will be used,
ensuring that the vegetarian version is just as delicious as the original.
2.
Vegetarian Chicken 65: For the Chicken 65 dish, the team will use soy-
based or paneer (Indian cottage cheese) chunks as a substitute for
chicken. These plant-based alternatives will be marinated and prepared
in the same fiery and tangy spices, providing the vegetarian guest with
an equally enjoyable experience.

3.
Vegan Haleem Option: To cater to the dietary needs of the vegetarian
guest who may also follow a vegan lifestyle, the team will prepare a
special vegan version of Haleem. In this adaptation, they will use plant-
based protein sources like lentils and chickpeas, along with wheat and
an assortment of vegan-friendly spices. The slow-cooked vegan Haleem
will retain its traditional flavors while being entirely meat and dairy-free.
The team is committed to ensuring that all guests, including the vegetarian
one, have a memorable dining experience, with dishes that cater to their
dietary needs and preferences. By making these adjustments to the recipes,
the team will guarantee that the vegetarian guest feels welcome and included
in the celebration.
