Chapter 13.1, Problem 2TQ
Summary Introduction

To review:

Production of less microbial biomass as compared to a large amount of lactic acid produced during cheese production by Lactococcuslactis, and the efficient cheese production at high temperature

Introduction:

In every living cell, each reaction is affected by two types of energy changes, namely ΔH (enthalpy) and ΔS (entropy). The microbial growth is also dependent on these components as they determine the effect of temperature. The change in enthalpy ΔH dependent reactions produce heat, while TΔS dependent reactions do not produce heat.
