Dish 1: Mee hoon kueh with mince chicken and cai xin Appearance The Mee hoon kueh had a lovely off-white hue. The use of minced chicken and cai xin produced a better appearance. The added cai xin makes the dish colorful. The soup is tasty and savory and is suitable for family. Garnishing with coriander leaves makes the dish look more attractive. The plain Mee hoon is not much healthy as it has low-calorie content and the addition of cai xin and chicken stock makes it more nutritious and caloric. It is cooked in soup otherwise the dry version gets dehydrated and sticky (profile, 2011). This dish hones the appetite of the individuals and attracts teenagers. Aroma The addition of spices like coriander and herbs like cai xin creates a pleasant aroma. The coriander gives a slight lime- like flavor (Ravi, et.al., 2007). Cai xin has a mild flavor (Isetan Singapore, 2020) which togetherly makes this dish savory. This attracts teenagers and their families as well. Texture It is neither spring nor yellow in texture ( Kimmy, 2014). Mouth feel This dish feels good in the mouth due to the presence of cai xin which is crunchy,
tender, and juicy and tastes bitter and sometimes sweet (Specialtyproduce.com, 2020). The flavor profile of coriander powder consists of different aldehydes and some of them have soap-like flavor ( Curious, 2020). The smell and genetic receptors determine the coriander taste beforehand and sometimes people with varied genetic receptor may experience higher bitterness levels which may make them feel bad due to its addition ( This, 2020) Recommendation: For making the dish much more tasty and healthier for the consumers, Spinach can be used with other materials in the preparation of the dough which is needed for making Mee hoon kueh. This makes the dish colorful and delicious. As spinach is a source of Vitamin A it would be beneficial for eye health, and also reduces blood pressure and oxidative stress. Dish 2: Pandan sponge cake Appearance This dish is made of pandan juice and no other artificial flavor or color is added.
The pandan sponge cake had a pleasant green hue which gave an appetizing look to this dish. It is highly suitable for the family as the pandan leaves are beneficial for treating high blood pressure, prevents dandruff and hair loss, etc (Faraaz, 2019). The recipe utilizes a separated-egg process which makes the cake much spongy and fluffier. This attracts the teenagers as this dish could be served in, as birthday cakes. Some might call this item a chiffon cake (Team, 2017). Aroma This dish has a strong pleasant pandan aroma which was due to the addition of the pandan paste. This dish doesn't contain any other flavor adding components. Texture The texture is soft and fluffy (Team, 2017). Mouth feel The pandan leaves have a soft and sweet aroma which can be strongly delineated as grassy with the hints of vanilla, almond, similar to coconut, and rose ( Schmidt, 2020). Recommendation: The Pandan sponge cake is fragrant, fluffy, and moist. It is suggested to add coconut milk during the preparation of the batter which enhances the flavor of the cake. Chocolate chips can also be added at the top of the batter for getting an extra flavor of chocolate which would also attract the chocolate lover teenagers.

Dish 3: Oatmeal chocolate chip cookies Appearance The oatmeal chocolate chip cookies have a brown chocolaty hue. Each serving contains 2.1 gm protein, 144.7 calories, 107.2 mg sodium, 20.5 mg cholesterol, and 17.2 gm carbohydrates (Allrecipes, 2020). Oatmeal cookies contain minerals and have high fiber content (Gaia Good Health, 2020). This provides a two-in-one taste of semisweet chocolate chips and whole grain oats which attracts teenagers and their families (BettyCrocker.com, 2020). Aroma This dish has a chocolaty aroma due to the chocolate chips. Texture The texture of this dish is chewy, thick, and super soft and is loaded with numerous melty chocolate chips ( Live Well Bake Often, 2020). Mouth feel The oatmeal chocolate chip cookie tastes sweet and is the most basic flour-based baked food that comes in different shapes
(Huffpost.com, 2020). Recommendation: White sugar must be used instead of brown sugar for making the oatmeal chocolate chip cookies crispier as white sugar let's much of the water out during baking which makes the cookies crispier. For making the cookies more flavorful extra virgin olive oil can be added. Also for substituting butter at a ratio of 3:4, Olive oil can be used in cookie preparation. Olive oil flavor is much stronger compared to other oils and it should be kept in mind that it can change the flavor of the baked product. References 1. profile, V., 2011.
