Concept introduction: Melting point of fatty acids depends on both the length of the carbon chain of the fatty acid and the degree of unsaturation. With the increase in the number of carbon, the melting point of the fatty acid also increases and with the decrease in unsaturation, melting point of the fatty acid increases.
