Given Information:

Reason for popcorn pop.

A tiny quantity of water is held inside a circle of soft starch in each popcorn kernel. This is why popcorn requires a specific amount of moisture. The hard outer shell of the kernel surrounds the soft starch.

The water expands as the kernel heats up, putting pressure on the hard starch surface. This outer layer eventually loses its way, causing the popcorn to erupt. The soft starch within the popcorn expands and bursts when it explodes, turning the kernel inside out.
