Subway Sandwich 4 Capacity Measures Capacity refers to the optimum output or production units which a business can attain in its production processes. One of the capacity measures that will help Subway optimally produce its sandwiches is human resources. The business will hire enough workforce to ensure that it has enough human resources or staff to handle its operational and production processes. Subway's capacity measure also includes machines as a production variable since it will have high-tech machines like modern ovens, fridges, and packing machines to help packers effectively pack their sandwiches to achieve maximum production. The company will also assess the market demand to ensure its maximum production output aligns with the market demand. This will be critical in ensuring that enough sandwiches are produced to meet its consumer demand in the market without having a surplus market. Subways layout design will also be critical in evaluating its capacity since it will determine its store handling ability, retail uptake of customers, and kitchen capacity. Key Performance Objectives Quality Subway Franchise seeks to produce sandwiches of high quality which meet consumers' tastes and preferences. Subway will employ quality assurance personnel to test and ensure that all the sandwiches conform to food safety standards. The quality assurance personnel will also ensure that the food handling processes by the chefs preparing the sandwiches conform to health and safety measures by maintaining food hygiene requirements to inhibit contamination of raw materials like cheese, butter or even the bread used in making the sandwiches. Subway Sandwich 5 The raw materials including meat, butter, wheat, and wrap materials are sourced from sustainable or organic farming to ensure that these materials are healthy with no adverse health consequences. Allowing consumers to witness the cooking and packaging of the sandwiches will increase transparency in the production processes of Subway, which is critical in maintaining the quality standards of the sandwiches. Since Subway Franchise is interested in improving its quality, it will ensure that it upholds continuous improvement or the Kaizen improvement model to set higher standards which are achievable through constant changes to eliminate identified gaps in its production processes. Georgise and Mindaye (2020) suggest that making continuous changes in organizational production processes over time increases the quality outcomes of products. Therefore, Subway Franchise will maintain the high quality of its products by embracing a culture of change. Speed The layout of the Subway Franchise has spacing which provides an opportunity for quick and efficient movement of the staff. The kitchen of the Subway Franchise is quite spacious to allow for cooperation and partnership between chefs and other staff to ensure that sandwich- making processes are handled quickly, efficiently and effectively. Also, Subway Franchise's retails have a wider layout design to enable customers to move in and out effectively without wasting time. The store has an online platform that allows consumers to order or purchase sandwiches online, which are delivered effectively to customers. The online ordering of sandwiches reduces wait time in the store lines and enhances the store's ability to handle and deliver orders to consumers in different parts of the town. Xu and Chen (2016) highlight that Just-In-Time reduces lead time in organizational operations ensuring that products are delivered within the required

Dependability The business will increase customers' dependability by maintaining quality communication with its customers. Customers often have multiple inquiries and complaints, making it essential to become dependable by effectively communicating with the customers all the time and solving their queries and complaints. Kumar et al. (2013) outline that dependability is an essential facet of a business to maintaining its competitiveness. Subway Franchise will also maintain an effective supply chain network to ensure that its sandwiches reach the targeted customers and markets in time and quality. This will be accomplished by maintaining multiple suppliers who will ensure that the company does not depend only on one supplier who can affect its operations in case the supply cannot supply the needed raw materials for making the sandwiches. Also, the company will have various retail outlets where its sandwiches can be sold to customers effectively and efficiently. Maintaining its retail outlets will eliminate the challenge of customers not accessing Subway sandwiches. Also, there are many delivery vans and bikes which will be used to supply the sandwiches to customers and other retailers. Subway Franchise will also ensure that it supplies customized sandwiches to consumers who want customized sandwiches and supply the other sandwiches according to orders made by customers without compromising on the quality and taste of the sandwiches. Subway Sandwich 7 The company will be ready to provide or make customized sandwiches to meet the customers' tastes and preferences provided the orders are made accordingly and timely. Slack et al., (2010) assert that flexibility is among the performance objectives which help organizations to meet their goals, missions and visions. Subway Franchise will not be rigid to producing sandwiches with defined ingredients, but will also offer sandwiches made from the ingredients suggested by the customers. The company will also allow consumers to order sandwiches online or in-store to offer a flexible model of ordering or purchasing the sandwiches. Since Subway will offer its services and products in-store and online, it will be flexible to buy from Subway Franchise since customers can decide to either purchase online or walk into the nearest Subway retail outlet to pick their favourite sandwiches. The business will source a variety of materials for making sandwiches to make it flexible to make different sandwiches or customize sandwiches based on customers' preferences and tastes. Customization of products is essential in meeting different customers' preferences which can help to achieve their satisfaction. Therefore, Subway Franchise will highly customize its sandwiches to meet the specific needs of its distinct customers efficiently. Cost Operational and production costs influence the prices of goods and services of businesses. Therefore, Subway Franchise will lower its operational and production costs to ensure that products are affordable to its customers. Ozdemir et al. (2019) reiterate that reducing a firm's operational cost has an impact on reducing its expense accounts. The company will use lean management to eliminate wastage in the operational and production processes to ensure that making the sandwiches are cheap or affordable to the consumers. Minimizing operational and production costs can help eliminate unnecessary expenses, thus saving some finances for the

The company will also take advantage of the government's tax incentive for startups to help the business pay minimal taxes and eliminate or minimize taxes on its sandwiches. Therefore, eliminating some sandwiches can be instrumental in lowering the prices of Subway sandwiches. Also, Subway Franchise will source its products locally from local farmers to reduce expenses like storage, transportation and tariffs associated with imported farm or agricultural produce. Local sourcing will reduce the finances needed for acquiring raw materials for sandwich-making, reducing the overall prices of the sandwiches. Finally, Subway will transfer the costs associated with sustainable packing to the consumers which will increase the overall sandwich costs by $2, but it will still be affordable since the overall production and operational costs are minimized by the company.
