The article “Clover Food Lab, Vegetarian Restaurant Chain around Boston Metro Area, Files for Bankruptcy” By Linsey Thorpe discusses how Clover Food Lab, a well-known vegetarian restaurant chain in the Boston Metro area, recently filed for bankruptcy due to a range of financial difficulties, increased competition, and shifting consumer preferences. While a simple vegetarian restaurant in a faraway state closing down may not seem like article-worthy news, it actually highlights many food justice and food security issues that we have discussed in class, showing how important it is to hear this news. Originally, Clover Food Lab gained mass traction and popularity as a restaurant with locally sourced and sustainable ingredients, that focused on having vegetable-based foods that attracted many young individuals who hoped to eat greener. However, as the article explains, the green restaurant filed for Bankruptcy as they were simply making too few sales, something that I have noticed has happened quite often to sustainable vegetarian restaurants. Many of these restaurants often go bankrupt because they are simply too expensive for the average consumer, which is often the case for these “green” food options, which raises concerns about food justice issues. Food justice is about ensuring that everyone has equitable access to safe, nutritious, and culturally appropriate food, so if these sustainable restaurants are overpriced, it is not allowing everyone the same access, as low-income and marginalized communities would be unable to afford to eat at these restaurants, regardless of whether or not they wanted to. On the other hand, if Clover Food Lab was truly just a popular, sustainable, and affordable vegetarian restaurant, then its closure is a food justice issue as it is taking away one of the few cheap healthy food options, which is not allowing everyone, regardless of their socioeconomic status, to have access to healthy and sustainably sourced food. Another reason that Clover Food Lab may be filing for bankruptcy is the fierce competition in restaurants, as even if their food is priced fairly, most fast-food restaurants offer food that is cheaper, quicker, and more filling, which the average consumer will likely choose over Clover Food Lab. Especially with the cost of living and food prices going up due to inflation, it may be that consumers are simply preferring the cheapest, quickest option, regardless of whether it's healthy or not. This is a huge food justice issue as people deserve to have access to healthy food options, especially those in areas with limited access to fresh and healthy foods, who simply want a convenient yet nutritious meal. On top of this, promoting and supporting restaurants like these will hopefully push other restaurants to realize the importance of healthy foods, and may even contribute to sustainability goals by emphasizing environmentally friendly sourcing and preparation methods for restaurants. While Clover Food Lab may be struggling, it can be made into an example of what we cannot allow to happen to other affordable sustainable healthy restaurants.
