If you were a nutritionist, how would you modify each culture’s diet to help treat these health problems?
The most common health problems of Mexicans and Central Americans are diabetes and cardiovascular diseases due to obesity. The traditional Mexican and Central American diets provide individuals with a great source of the necessary vitamins and nutrients, but the modifications of foods and the availability of ingredients and fresh foods in America prevents individuals from getting the necessary nutrients. Thus, Mexican Americans and Central Americans living in the United States develop things like obesity and ultimately diabetes from the lack of nutrients, and the excessive consumption of fried and fatty foods. As a nutritionist, I would recommend a decrease in fried foods, and more fruits and vegetables to aid in metabolism. One of the biggest health problems of Caribbean Islanders is infant mortality and low birth weight. Many Caribbean Islander immigrants in the US are severely malnourished, and factors such as low income and geographic location contribute largely to the malnourishment. The traditional Caribbean diet is generally already low on essential vitamins and nutrients, so as a nutritionist I would suggest a diet with more leafy vegetables and meats to provide adequate iron and vitamins, and more calories. For South Americans and their descendants in the United States, obesity is largely prevalent
in certain regions. This is resulting from a number of factors, including the increased intake of added fats that are substituted for unavailable ingredients. As a nutritionist, I would cut down on fried snacks and butter, and add more fiber into the diet of South Americans in the United States.
The hot cold system is prevalent among the Mexican and Caribbean cultures described in this module.

The Mexican hot-cold system comes from an Arab system brought to Mexico by the Spanish, and it is believed to be linked to disease. Mexican cultures believe that disease is caused by an imbalance between hot and cold, as hot represents strength, and cold represents weakness. Meals must be balanced, for example hot rice is eaten with cold beans. “Hot” illnesses, such as pregnancy and hypertension, are treated with cold foods, and vice versa.
Similarly, with Caribbean cultures, illness is believed to result from an imbalance of hot and cold. Again, hot illnesses like pregnancy are treated with cold foods, and vice versa. However, Caribbean cultures have added in a “cool” category. And healers use not only hot and cold foods for treatment, but herbal teas. Another difference is that Caribbean cultures believe that an imbalance of hot and cold can come from other things outside of food. For example, sitting outside in the sun for a long time and then moving into the shade under a tree can cause illness.
