Short Answer Questions Question 1
ISO 14001 is an international standard that specifies the requirements of an organisation’s
sustainability management system (SMS).
Outline the seven requirements of an SMS under the Implementation and Operation clause. a.
Environmental Policy: The organization must establish and maintain an environmental policy
that includes commitments to compliance with applicable environmental laws and regulations,
pollution prevention, and continual improvement of environmental performance.
b.
Environmental Planning: The organization must develop a strategic approach to managing its
environmental aspects and impacts. This includes setting environmental objectives and targets,
establishing programs to achieve these objectives, and defining the roles, responsibilities, and
authorities for implementing the programs.
c.
Legal and Other Requirements: The organization must identify and have access to applicable
legal and other requirements related to its environmental aspects. It should establish and
maintain procedures to ensure compliance with these requirements and keep them up to date.
d.
Resources, Roles, Responsibility, and Authority: The organization must provide adequate
resources, including human resources, training, infrastructure, and technology, to support the
implementation of the SMS. It should define the roles, responsibilities, and authorities for
individuals involved in the SMS and ensure their competence.
e.
Operational Control: The organization must establish and maintain documented procedures to
control activities and processes associated with its significant environmental aspects. This
includes the identification and implementation of controls to mitigate environmental impacts
and the establishment of emergency preparedness and response procedures.
f.
Emergency Preparedness and Response: The organization must establish procedures to
identify potential emergency situations and respond to them effectively. It should periodically
test and review these procedures, provide appropriate training to relevant personnel, and
communicate the procedures to stakeholders as necessary.
g.
Monitoring and Measurement: The organization must establish and maintain procedures to
monitor and measure key characteristics of its operations that can have a significant impact on
the environment. This includes monitoring compliance with legal requirements, evaluating the
effectiveness of controls, and tracking progress towards achieving environmental objectives
and targets.

Environmental Code of Practice Sustainable Management of Food
How this Code of Practice Applies to Your Organisation
The Sustainable Management of Food code of practice focuses on promoting sustainable
practices within the food industry, including food preparation, handling, and waste management.
For a kitchen college, this code of practice can apply in several ways:
Sustainable Sourcing: The code encourages organizations to prioritize sourcing sustainable and
locally produced ingredients. Your kitchen college can implement this by establishing relationships
with local farmers and suppliers who follow sustainable practices, such as organic farming or
ethical sourcing.
Waste Reduction and Recycling: The code emphasizes the reduction of food waste and proper
waste management. Your organization can implement practices such as portion control, proper
storage, and encouraging students to minimize food waste. Additionally, establishing a recycling
program for packaging materials, such as plastics and cardboard, can further support waste
reduction efforts.
Energy Efficiency: The code encourages the use of energy-efficient equipment and practices. Your
kitchen college can invest in energy-efficient appliances and educate students about energy-
saving techniques, such as using appropriate cookware sizes, utilizing residual heat, and turning
off equipment when not in use.
Water Conservation: The code promotes water conservation practices, such as reducing water
usage during food preparation and cleaning. Your organization can implement measures like
installing water-efficient faucets and equipment, promoting awareness among students about

water conservation, and adopting efficient cleaning practices.
Education and Awareness: The code highlights the importance of educating staff and students
about sustainable food practices. Your kitchen college can integrate sustainability principles into
the curriculum, offering courses or workshops on sustainable cooking techniques, ethical
sourcing, and waste reduction.
By following the Sustainable Management of Food code of practice, your kitchen college can demonstrate
a commitment to sustainable practices, instill environmental awareness in students, and contribute to a
more sustainable food industry. It is important to consult the specific code of practice applicable in your
state/territory for detailed guidance and requirements.
