The metabolic process which is used to change the organic substance chemically in the presence of enzyme is known as fermentation. The fermentation process is used to change the glucose into ethanol and CO2 in the presence of the enzyme, yeast.

In light beer, only few sugars are found which are produced by fermentation of monosaccharides by amyloglucosidase. The alcohol content in light beer is low because of the dilution.
