Introduction:

Fructose is a monosaccharide sugar that contains ketone as a functional group. This fructose reacts with glucose molecule to form disaccharide sucrose. In the linear structure of D-fructose, the carbonyl or anomeric carbon (C2) forms a bond with the oxygen atom of hydroxyl group present at carbon 5. This bond formation will result in an alpha and beta anomers of D-fructose.
