Summary Introduction

Temperature affects the microbes in two ways. An increased temperature may enhance the bacterial growth and the rate of enzymatic reactions. In some cases, a certain temperature may affect and denatures the cellular components and proteins. For all the microbes, there is a minimum temperature, when growth is not likely, optimum temperature, when growth is rapid, and maximum temperature, when growth is not possible. These three types of temperatures are referred to as cardinal temperatures.
