Proteins are polymers of amino acids joined by peptide bonds. There are various levels of protein organization namely, primary, secondary, tertiary, and quaternary. Proteins perform a wide variety of functions. Some are structural proteins, for example, keratin and collagen, some are transport protein, for example, porins, some proteins act as signaling molecules, some are involved in defense mechanisms and others are grouped as enzymes.
