Introduction:

Lipids are hydrophobic in nature, so the digestion and absorption of lipid is a more complicated process, when compared to the protein and carbohydrate digestion. Lingual lipase in the mouth, secreted by intrinsic salivary glands digest small quantity of fat, and this enzyme is more active in the stomach because of acidic pH. Emulsification droplets, micelles and chylomicron are involved in the lipid digestion.
