The amylase enzyme is secreted by the bacterium Bacillus macerans, which acts on starch, in order to breakdown the starch to from dextrins. These are referred to as Schardinger dextrins, as the bacterium Bacillus macerans was first identified by Schardinger. These compounds are of torus shape, having a hydrophobic region lysing to the interior of the surface.
