Grease is a hydrophobic molecule having no effect of water on it, thus can be removed with the help of soap or detergent.
Soap is formed from the potassium hydroxide or sodium hydroxide with triglyceride while triglycerides consists of glycerol and 3 fatty acid. Thus, soups are sodium or potassium salt of long chain fatty acids.
