Introduction:

Water is a universal solvent that has the capacity of dissolving most of the organic compounds. Water-loving character is also called hydrophilic in nature. The hydrophobic bonds are water repelling in nature. Hydrolyzed means dissolving organic compounds in water. Hydrated means addition of water molecules to organic compounds. Amphipathic means partially hydrophilic and partially hydrophophic in nature.
