Interpretation Introduction
Interpretation: The effect of partial hydrogenation of a fat or oil has to be predicted.
Concept introduction: During partial hydrogenation, some, but not all, of the double bonds are converted into single bonds. It causes a decrease in the number of double bond or decrease in the degree of unsaturation in fatty acids.
