Interpretation:
The similarities between amylose and cellulose and the main structural differences between starch and cellulose should be explained.
Concept introduction:
Amylose and cellulose are polysaccharides of glucoseunits linked linearly by glycosidic bonds. Cellulose is a glycosidic bond. It is more soluble in water than other polysaccharide made up of glucose that is amylopectin. It is not easily digestible because of its tightly packed structure. During the hydrolysis process, the amylose gives D-glucose and maltose because maltose is a disaccharide of glucose where, glucose units are joined together with same
linkage.Cellulose has
glycosidic bond.
