Healthy Eating Activity
Persona #1: Ash is a first-year student athlete who lives on campus and has the All
Access 19 meal plan. From the guidance, Ash needs to consume approximately 3,000
calories per day with at least 150g of protein and 5 servings of a variety of fruits and
vegetables each day. To make a healthy and nutritious meal plan, Ash can purchase
fresh fruits and vegetables from the on-campus markets and food vendors.
Ash can also consume lean proteins like chicken, fish, and eggs, as well as whole
grains and legumes. A typical daily meal plan for Ash could look like this:
Breakfast: 2 eggs cooked in olive oil with kale, mushrooms & tomatoes served on a
whole wheat English muffin - $4.50
Lunch: Grilled chicken sandwich served on a whole wheat bun with spinach, tomatoes &
mayo - $5.50
Dinner: Stir-fry of quinoa, bell peppers, onions, mushrooms & edamame with teriyaki
sauce - $7.00 Snacks: Trail mix & hummus with carrots & celery - $3.00 Total: $20.00
Persona #2: Sam is a single parent of a teen-age child who works a full-time minimum
wage job and takes online courses in the evenings. They live in a neighborhood without
a full-service grocery store and qualify for the Supplemental Nutrition Assistance
Program, which gives $12 per day to spend on food. Due to their limited budget, Sam
must shop at convenience stores and fast-food restaurants. To make a healthy and
nutritious meal plan, Sam would need to be mindful of the nutrient content of the food
options available to them. A typical daily meal plan for Sam could look like this:
Breakfast: Oatmeal with cinnamon & almonds - $1.00
Lunch: Salad with mixed greens, beans, corn, tomatoes & red onion with homemade
vinaigrette dressing - $2.50

Dinner: Baked fish with vegetables & quinoa - $5.00 Snacks: Apples & peanut butter -
$1.50 Total: $10.00
When evaluating the effort required to secure wholesome foods for both Ash and Sam,
it is clear that the lack of resources and access to options for Sam is a major barrier in
ensuring they are able to follow a nutritious diet. While Ash has the privilege and access
to options that allow him to purchase fresh fruits & vegetables with relative ease, Sam
has to contend with nutrient-poor options and does not have the budget to consider
healthier options such as lean proteins.
This activity has provided me with a greater understanding of how access to healthy
foods can be a major factor in determining whether an individual can readily follow a
nutritious diet. It has impacted my view of the causes of obesity, in that the lack of
access to nutritious food can be a major barrier to preventing its onset. Poverty, access
to resources, availability of healthy food options, and other surrounding factors can play
a major role in the development of obesity. As such, it is important to look beyond
individual factors to understand how the environment and social determinants of health
can impact people’s ability to consume a healthy diet.
