Results
In order to protect American food supplies, there is a need to educate our middle/high
school and undergraduate college students in food and agriculture-related fields about food
protection and defense. The food and nutritional sciences at North Carolina A&T State
University has received several educational grants to develop instructional materials for
middle/high and undergraduate students and to start a new food protection and defense
curriculum. Three food defense and protection courses have been approved for teaching as
part of the food science curriculum. A new educational manual was also developed and
used in these educational activities. Our educational activities demonstrated the public’s
interest in learning about the importance of food protection. Most of the students
participating in these activities showed interest in taking more formal training in this area
and would recommend these educational activities to others. The food and nutritional
science at North Carolina A&T State University plan to expand these activities and include
graduate students.

Plan of operation and methodology
We have already established three courses on food defense and protection. We have
attended food defense workshop (AIB International) and certified by AIB to teach these
established food defense courses.
We have conducted several educational workshop/seminars and training to high school
teachers and students about the importance of food defense and protection. In the first stage of
the development of this Food safety Wiki, we developed content that focuses on food safety
education and educational opportunities from K-12 through undergraduate and graduate
education education through professional training opportunities
Introduction
Due to challenges from serious terrorist threats, it is imperative that research institutions
and government collaborate to establish significant food protection and defense programs.
There is clearly a great need for scientists and instructors in this area. In the traditional food
science/agriculture programs at the 1890 universities, a food protection and defense
curriculum has not been fully developed. As a result, students are not adequately prepared
to handle the
increasingly complex challenges of national food protection and defense. To
address this issue, several faculty members at NCA&TSU will be involved in the
development of a multidisciplinary food defense and protection curriculum.
We have proposed three distinctive objectives to be completed in three years. We would
anticipate that successful implementation of this project will provide much needed training
in the area of food protection and defense. Our program will be a vital first step in the
training of a new generation of professionals who will have the knowledge and expertise to
protect our national food supply.
