Concept introduction:
The addition of small amount of salt to a solution of charged protein increases the solubility of the protein in water. This is known as the salting-in effect. The addition of large amounts of salt decreases the solubility of the protein such that it precipitates out of the solution. This is known as the salting-out effect.
