Carrots belong to herb family. They are biennial plants. They grow as a large taproot with a bunch of leaves. Their large pointed taproot contains stored food in the form of carbohydrates. They are a rich source of beta carotene.

The food reserves of taproot are usually used for flowering in the next season. The carrots that are left in the field turn bitter and their nutritional quality also deteriorates with time.

B. LEAF ADAPTATION The main function of the leaf is in the processes of photosynthesis and transpiration. Apart from these functions, leaf is sometimes adapted to perform other functions.
