The gastric gland secretes 2 to 3 Liters of gastric juices every day that is composed mainly of hydrochloric acid (HCl), water and pepsin. High concentrations of Hydrochloric acid present in gastric juice and the pH are 0.8. HCl activates the enzyme lingual lipase and pepsin, it aids in food liquefaction and forms chyme.
