Chapter 23, Problem 1O
Summary Introduction

To determine: The effect of diet consisting of carbohydrates on muscle glycogen and endurance during heavy exercise.

Introduction: Nutrition is defined as the essence of the food that people intake. Nutrition is important to perform various activities of growth, repair, and maintenance of the cells/constituents of the body. Some important constituents of the food that comprise the maximum of the food are carbohydrates, lipids, and proteins. Vitamins and minerals are equally necessary. All these constituents impart different amounts of calories.

Explanation of Solution

Carbohydrate is a class of biomolecules that are made of sugars and saccharides. Carbohydrate plays the role of the maximum provider of energy. Hence, a person performing rigorous exercise is in need of larger intake of carbohydrate in the diet.

Heavy exercises rapidly exhaust the level of muscle glycogen. The effect of various diets (2800 kcal/day) on muscle glycogen and endurance performance is as follows:

  • After exercise, the intake of a diet (2300 kcal from carbohydrates) with maximum carbohydrates increased the level of glycogen (3.31g /100g muscle) in muscles. Moreover, the endurance was found maximum with performance duration of 167 minutes.
  • A medium carbohydrate diet provides intermediary levels of glycogen (1.75 g /100g muscle) with performance duration of 114 minutes.
  • A protein–lipid-rich diet (low carbohydrate level) will not provide sufficient levels of glycogen (0.63g/100g muscle). Endurance level is also found minimum in such cases with performance duration of 57 minutes.

Awnser these Discussion Questions Answer these discussion questions and submit them as part of your lab report. Part A: The Effect of Temperature on Enzyme Activity Graph the volume of oxygen produced against the temperature of the solution. How is the oxygen production in 30 seconds related to the rate of the reaction? At what temperature is the rate of reaction the highest? Lowest? Explain. Why might the enzyme activity decrease at very high temperatures? Why might a high fever be dangerous to humans? What is the optimal temperature for enzymes in the human body? Part B: The Effect of pH on Enzyme Activity Graph the volume of oxygen produced against the pH of the solution. At what pH is the rate of reaction the highest? Lowest? Explain. Why does changing the pH affect the enzyme activity? Research the enzyme catalase. What is its function in the human body? What is the optimal pH for the following enzymes found in the human body? Explain. (catalase, lipase (in your stomach),…
