Concept introduction: Fats play an important role in maintaining a healthy diet. They can be either saturated fats or unsaturated fats. The difference between saturated and unsaturated fats is based on the number of double bonds in the fatty acid chain. Unsaturated fatty acids have at least one double bond in the fatty acid chain while unsaturated fatty acids lack double bonds in the fatty acid chain.
