To explain: The reason why most proteins have less D-aspartate and elastin has increasing levels of D-aspartate steadily with age.

Concept introduction: Racemization is the process where the pure mixture of enantiomers is converted entirely into another form of enantiomer. L-aspartate in proteins is racemized to D-aspartate by racemization. Elastins are highly contractible proteins that can come back to their original state once the stress which causes the contraction is removed. Elastin is present in skin and connective tissue and is part of anchoring junction proteins.
