The relationship between the effect of the number of carbon-carbon double bond in fatty acids and their melting points should be explained.
Concept Introduction:
Fatty acids are aliphatic mono-
General formula
Saturated fatty acid: They have no double bonds in between the long hydrocarbon chain, so they are straight and can be packed together.
Example: Myristate, Palmitate, Laurate, etc.,
Unsaturated fatty acid: They have at least one double bond in between the long hydrocarbon chain.
These double bonds cause the fatty acid chain to “kink” which results in more fluidity.
