Interpretation:
The given food stuff with lower iodine number should be determined.
Concept Introduction:
Iodine number: The iodine number is defined as the amount of iodine consumed by per 100g of any unsaturated fat. The unsaturated fat reacts with iodine molecule as shown in the figure.
Thus, the level of unsaturation in a given compound can be known by this reaction or the greater iodine number of a fat molecule.
Van der Waals interaction: Van der Waals interactions arise from fluctuation of the electron distribution between species that are close to each other. The forces are totally non-directional and very weak. The strength of the van der Waal’s interaction increases as the size of the units linked increases.
