Concept introduction: Amylase is an enzyme that helps in the digestion of carbohydrate. It catalyzes the hydrolysis of starch into sugar. It is found in the saliva and pancreas of humans and some other animals. When the pancreas is diseased, the enzyme amylase is released from the pancreas into the blood.
