Dry heat is air with very low moisture concentration that is heated by the flame and has temperature range from 160 to several high degrees Celsius. Dry heat targets cellular structures like cell wall or membrane of microbes. The loss in the integrity of cell membranes and loss of protein structures of microbes leads to their death.
