The Strecker degradation is the result of the reactions of a-dicarbonyl species
with amino acids. Importantly, this gives rise to both volatile aldehydes and
pyrazines (that can result in food aroma and flavour).
A significant amount of the pyrazine A and the aldehyde B were found in a foodstuff after
cooking and were thought to be the result of Strecker degradation.
