SATURATED FATTY ACIDS
They are the simplest form of fats that are unbranched linear chains of CH2 group linked together by the carbon-carbon single bonds with a terminal carboxylic acid. The term saturated is used to denote the maximum number of hydrogen atoms is bonded with the carbon atoms and molecule of fat . The the fatty acids obtained from the animal sources are usually the even numbered linear chains of saturated fatty acids. However, lipids from all the sources contains small amounts of saturated fatty acids with odd number of carbon atoms. Most fatty acids are long chained with 12 or more but the shorter fatty acids like the butyric acid and caproic acid are important saturated fatty acids found in milk.
