# Assignment to be handed in:

## 1. The peptide below was isolated from fermented milk and shown to have antioxidant properties

**Lactobacillus delbrueckii subsp., bulgaricus** IFO13953

**Peptide Sequence:**
N-Ala-Arg-His-Pro-His-Pro-His-Leu-Ser-Phe-Met-C

### Questions:

a) Draw the primary structure of the peptide from the N-terminal to the C-terminal. Ensure that the ends and the R groups are in the ionization state expected at biological pH=7.

b) Place a box around each of the peptide bonds.

c) Write the sequence using 1-letter abbreviations.

d) What is the net charge of the peptide at pH=7? Calculate the pI.

e) Draw the titration curve for the polypeptide and show where the pI and buffering regions are.

f) Identify –R groups that:
   - Are hydrophobic, hydrophilic and aromatic
   - Are the H-bond donors and acceptors by placing a d or an a by the appropriate atom
   - Can take part in electrostatic interactions. For the R groups that are charged at pH=7, list the other possible charged R groups that would interact favorably with the charged group in the peptide (based on the common amino acids list).
