The donut production process starts with the measuring of ingredients. First, one employee pours the pre-packaged dry mix into a large bowl located on a scale. The dough is placed into an extrusion machine which produces eight (8) donuts in five (5) seconds, placing them onto a steel shelve which moves throughout a “proofing” machine to allow the dough to slowly rise (inflate). After 30 minutes in the proofing machine, the now-puffy donuts slide one shelf at a time into a fryer. The donuts fry for one (1) minute; then, they are mechanically flipped to fry on the opposite side. After the second minute, the donuts emerge on a conveyer belt and move through a glazed waterfall (melted sugar glaze) which covers the tops, sides, and bottoms of the donut. It takes 1 minute on the waterfall conveyor belt. Then, the donut transfers to a second conveyor belt for two (2) minutes to dry and cool. Once at the right temperature, 12 donuts are placed into one box, ready for sale. It takes an employee 55 seconds to load one box and close its lid. There are nine (9) packing employees.
