It is the summer and therefore you can’t go to the local school to recruit your panelists. There is a local fair coming up and you decide to set up a testing booth at the fair to get enough panelists to have sufficient data to analyze. Discuss the advantages and disadvantages of running this ice cream taste panel at the local fair.

Forty-five panelists were chosen to complete the test. 35 of the 45 respondents selected the reformulated sauce as containing less garlic. Their original strawberry flavoured milk is sweetened with sucrose. They now want to launch a sucralose (Splenda) sweetened strawberry flavoured milk. This milk needs to be of comparable sweetness to their original milk. They have hired you to find out if a difference exists between the two products. You have read that people who live in Ontario have a different sweetness threshold than people who live in Newfoundland. You decide that you need to conduct your difference test in two locations (one at University of Guelph) and the other in St John’s Newfoundland. Your first test at Guelph is run in the sensory lab. 28 responses are collected during testing. 30ml of sample are presented at refrigerator temperature (2°C). Because the samples may be slightly different in colour, the samples are tested under red lights. The average age of the panelist used for this test is 25. Testing in Newfoundland is conducted in the lobby of the local Sobey’s supermarket. A table is set up in the entranceway of the supermarket and individuals are asked to be a part of the testing as they are walking by the table. The samples are pre-poured and served at room temperature. Because you don’t have a refrigerator to keep the samples cold, you serve the samples in 250ml polystyrene coffee cups. 125ml of sample is poured into the cups and presented for testing. The average age of the panelist for this test was 60 years old. 22 panelists completed the test. In both locations, the same test was conducted. It was a triangle test and the wording on the questionnaire was to drink the entire sample and indicate which sample was the odd sample.
