Microbial fermentation pathway has been extensively utilized by the people in the production of a variety of food products and organic materials. By utilizing fermentation process certain products like yogurt, cheese, pickles, alcoholic beverages (wine, beer), bread, and biofuels, etc. can be made.
Introduction:
Fermentation can be defined as an anaerobic breakdown of the glucose molecule to produce energy (ATP). The end products of the lactic acid fermentation process were lactic acid and nicotinamide adenine dinucleotide (NAD+); whereas, carbon dioxide, ethanol, and NAD+ are produced during the alcoholic fermentation process.
