Interpretation:
The reason behind the ineffective digestion of triglycerides by the lipases found in saliva and stomach has to be determined.
Concept Introduction:
Triglycerides are essentially the derivatives of glycerol, where the terminal alcoholic groups are replaced by ester groups by esterification with long fatty acids. These triglycerides are hydrophobic. Thus a triglyceride is formed from three molecules of fatty acids esterified with one molecule of glycerol as the backbone.
Lipases are the class of enzymes that act on triglycerides to hydrolyze them into its constituents, namely glycerol and fatty acids. The general reaction catalyzed by lipase can be given as follows:
