Concept explainers
(a)
Interpretation: The questions based on the micelles formations are to be answered.
Concept introduction: When a mixture of fatty acid is agitated with water, en emulsion is formed. An emulsion is a mixture of two or more immiscible liquids. In the formed emulsion the spherical structures are dispersed throughout the water. These dispersed spherical molecules are called micelles. The molecules of micelles are the lipid molecules. All lipid molecules are water insoluble. Therefore, the micelles are also water insoluble. A molecule of micelle comprises of hydrophilic part in contact with surrounding solvent.
To determine: An explanation for the formation of micelle structures with the given orientation.
(b)
To determine: The reason for destroy of micelles by the addition of strong acid to the mixture.
(c)
To determine: The reason for destroy of micelles by the addition of salt to the mixture.
