The “polarity” of water molecules and the ability to form hydrogen bonds enables water to dissolve many substances. Hydrophilic substances dissolve easily in water. Ionic solids, such as sodium chloride, are hydrophilic. Many nonionic solids, such as sugar, are also hydrophilic. Water does not interact with hydrophobic substances.
